Winemakers and partners Dani Sánchez and Toni Coca met at the begining of their careers, working together in the Priorat region fifteen years ago. They both went on to start their own wineries - Azul y Garanza in Navarra (Dani) and Coca i Fitó in Montsant (Toni). They recently launched the DiT Celler project together, combining their strengths and knowledge to make the first organic wines in the Montsant D.O. and Terra Alta D.O.
Terroir: Monstant is a relatively new DO (approved in 2001) forms a horseshoe around the Priorat region, taking its name from the rocky massif of Monsant. The vineyards fall in spectacularly beautiful hilly countryside, scattered between olive groves (producing excellent quality oil), forest and bare mountain peaks. Soils here are limestone and loam over a granite and slate base. Mas d'En Fornós and Guiamets, the vineyards for Cabirol Red, surround the mountains of the natural park Llaberia in Priorat, The local name for the soil type is "pinyolencs," which are rich in calcium, giving acidity and freshness to the wines. The weather can get quite warm in summer time, but every summer afternoon a wind coming from the Mediterranean Sea called "Marinada" cools down the temperature. Cabirol is the Catalan name for a wild goat which lives in the mountains surrounding the vineyards.
