About: "The eye of the dragon." A star in the northern constellation, Draco is known as the head of the dragon, which is full of wisdom.
Winemaking Notes: The grapes were hand sorted and 100% destemmed. They fermented in individual lots and went through a cold soak for 10-15 days. After racking to barrel, the wines aged for 18 months in French oak. The wine is unfined and unfiltered.
Tasting Notes (by Chris Blanchard, MS): Beautiful floral aromas, lilac, purple flowers, red fruit, lavender candy, rhubarbs, root and gentian aromas in the nose. Slightly herbal palate with raspberry, candied cherry, crimini mushrooms and forest floor. Fantastic mouthfeel, supple with bright acidity and a long finish. A truly delicious wine with intense complexity and red fruits. Perfect with a cheese plate, salmon on buckwheat blini and creme fraiche, pork or duck with cherries.
