Winemaking Notes: Perrone's vineyards are northwest-facing. He believes that ripeness is easy to achieve, if yields are kept reasonable. His vineyards cool down faster in the evening, and retain more acidity and freshness. The vines are 25-60 years old with an average yield of 40 hL/hA. The grapes are estate sourced and purchased. They are harvested by hand. Sourgal is released in late November.
