About 'Forgotten Fortune' Junmai: Fukucho is the only brewer to use Hattanso rice. Hattanso was an abandoned rice that is the parentage of several famous rice varieties. Toji Miho Imada painstakingly revived it along with farmers who had to learn how to grow it. Fukucho is the only brewer to use this rice. The rice is deliberately milled much less than most junmai, allowing the full, bold flavor of the rice to be expressed. 

Tasting Notes: Full flavor, earthy touches and great texture with a long, persistent finish. Pair with grilled oysters with lemongrass crème fraiche or red curry, coconut and ginger-infused steamed clams.

About Imada Shuzo: Imada Shuzo brewery was founded in 1868 and is located in the Hiroshima prefecture. Miho Imada represents a highly unusual combination when the brewery owner is also the Toji. Furthermore, Miho is one of the few female Tojis in Japan, which is extremely rare. Adding to Fukucho’s uniqueness, water in this region is very soft in comparison to most sake-brewing regions, which is a major contributor to the rich taste and floral aromatics of Miho’s sake.
