Grapes are from older vines on the estate vineyard Pago Balbaino. The solera of the 'Antique' Fino is used to feed the third criadera of 'Antique' Amontillado, which averages more than 20 years. The wine is bottled only once a year, in the winter, with the cold weather acting as a natural clarifier so very little filtration is needed.

Amontillado is characterized by being darker than Finos, but lighter than Olorosos. Amontillados are essentially aged Finos that have undergone some amount of oxidative aging and fortification. A cask of Fino is considered to be Amontillado if the layer of flor fails to develop adequately, is intentionally killed by fortification or is allowed to die off. So that the wine does not oxidize without the protection of the flor, it must be fortified.

Fernando de Castilla 'Antique' Amontillado is light amber in color. The wine is exceptionally aromatic and provides a long aftertaste.

The NV Antique Amontillado is amber-colored and has a subtle nose of tobacco, some iodine, pollen, beeswax and hazelnuts. The medium- to full-bodied palate shows lots of concentration and acidity, with a very intense finish. 4,000 bottles are produced yearly. Drink 2013-2017.
